Willingham’s BBQ Rub

Gibb’s Butcher Block

Columbia Station, OH 44028

2 slabs Baby Back Ribs, trimmed
Coat liberally with Willingham’s BBQ rub
Place on Memphis Pro Stainless Wood Fire grill at 210 degrees for 8 hours
During the 8 hour cooking process spray ribs with Apple Juice at least four times (once every two hours)
If using sauce, wait 6 hours until basting ribs.
Allow ribs to cook 2 hours with sauce to allow flavors to mingle (Apple Wood chips for smoker)

2 whole chicken breasts, halved and trimmed
Rub chicken breasts with Willingham’s BBQ rub
Baste one side with Rizzy’s Vinaigrette Dressing and place basted side down
Baste top side with Vinaigrette Dressing Cook 7 ½ minutes on each side – turning once – on Memphis Pro Stainless Wood Fire grill
Grilling temp: 525

Rizzy’s Vinaigrette:
-1 TBSP Dijon Mustard
-1 TSP Garlic
-1 TSP Salt
-1/2 TSP Pepper
-3 TBSP Champagne Vinegar
-1 Cup Olive Oil

Whisk the first five ingredients together while adding olive oil slowly. This will allow the dressing to thicken.
Let the dressing rest in the fridge for a half hour to let the ingredients mingle.

2 lbs ground chuck
¼ cup Montreal Steak Seasoning
Dash of Worcestershire sauce
Formed seasoned meat into six patties
Cook 5 minutes on each side – turning once – on Memphis Pro Stainless Wood Fire grill
Grilling temp: 505
