Twice Baked Sweet Potatoes w/Honey Butter
Recipe by April Thompson, chef/owner Sweet Chicks Custom Cupcakes and Wild Thymez Personal Chef Services
- 6 sweet potatoes
- 1/3 cup orange honey
- 2 tbsp. cinnamon
- 1 tsp. nutmeg
- ½ cup chopped pecans
- 2 sticks of unsalted butter (room temperature)
Wash and dry potatoes. Place in baking dish and drizzle with olive oil. Bake at 350 degrees for one hour.
Mix butter, orange honey, cinnamon and nutmeg in a bowl and set aside. Once potatoes are done, slice down the middle as you would normal baked potatoes and carefully scoop the insides out and place into a mixing bowl. Spoon butter mixture over potatoes, add a few sprinkles of pecans and mix. Return potato mixture to the sweet potato shells, drizzle with more honey butter and nuts and they are ready to serve.
*If you are unsure about potential nut allergies, leave the nuts in a bowl on the side for guests to add themselves.
