Ziti Summer Pasta

  • 4 ripe plum tomatoes, seeded and cut into 1/2 inch pieces
  • 1/3 cup virgin olive oil
  • 1/4 cup parsley, chopped
  • 2 tbsp basil, chopped
  • 2 tbsp mint, chopped
  • 1 tbsp capers, rinsed
  • 1 garlic clove, minced
  • 1/2 tsp crushed red pepper
  • 1/2 tsp ground black pepper
  • Kosher or sea salt to taste
  • 1 lb ziti pasta
  • 1/4 cup Romano grated

 

Prepare in a large pasta serving bowl

While ziti pasta is cooking to al dente (about 8 or 9 minutes), put all of the ingredients, except the cheese into the serving bowl.

Drain pasta, put in bowl, and toss.

Add cheese and toss again. It’s ready to serve.
