- 10 oz. Mixed baby greens
- 1 C. cherry tomatoes halved
- ½ C. black beans cooked (or canned, drained and rinsed)
- ½ C. corn kernels, grilled
- ¼ C. red onion diced
- 1 avocado, diced
- 2 tbsp Sonoma smoked olive oil
- 2 tbsp chipotle BBQ sauce
- 3 tbsp fresh lemon juice
- Dash of hot sauce
- Dash of coriander
- Salt and pepper to taste
Mix ingredients for the dressing first so flavors have time to blend.
Toss lettuce and toppings in salad bowl. Add dressing, toss lightly and serve.
