- 1/4 c soft butter (not margarine)
- 8 oz room temp cream cheese (not reduced fat)
- 2 t vanilla
- 4-5 cups powdered sugar
- 4-5 cups shredded coconut
Beat butter and cream cheese until creamy. Add in vanilla and beat again. Next, add in powdered sugar and continue beating. Lastly, add in shredded coconut and mix by HAND.
Adjust the amount of powdered sugar and coconut until not super sticky.
Chill about 1-2 hours then roll in “potato shapes” and mix in cinnamon to look like potatoes.
*can use cocoa powder & powdered sugar with the cinnamon also.
MAKE SURE YOU CHILL WHEN MIXTURE GETS STICKY WHILE ROLLING.
