Strawberry Freezer Jam
- About 1 quart hulled strawberries, enough to measure 2 cups when crushed
- 4 c. sugar
- 3/4 c. water
- 1 box powdered pectin (1 3/4 oz.)
Crush berries one layer at a time to measure 2 cups and place in a large bowl. Add sugar, mix well and let stand 10 minutes. Combine water and pectin in small saucepan and bring to a boil. Boil for 1 minute, stirring constantly. Pour pectin mixture into berries and stir 3 minutes. Pour mixture into sterilized freezer containers leaving 1/2 -inch headspace if using freezer jars. Seal immediately with sterilized lids and allow to stand at room temperature until jam is set. This can take up to 24 hours. Freeze jam after it thickens. Makes 5-6 half-pint jars.
