Dwayne Johnson ‘The Rock’ Cookies
2 C. flour
1 C. granola (break up clumps)
1 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
2 ½ sticks unsalted butter (20 tbs)
1 C. light brown sugar
½ C. sugar
1 large egg
1 yolk from large egg
1 tbs vanilla extract
¾ C. dried cranberries
1 ½ C. chocolate chips
Preheat oven 325F
In a medium bowl, combine flour, granola, baking soda, baking powder and kosher salt.
In a large bowl (a standing mixer with paddle works best), beat butter and sugars until creamy (medium speed).
Add egg and egg yolk along with tbs of vanilla. Combine completely.
Add dry ingredients. When incorporated, add chocolate chips and dried cranberries. When ingredients appear to be evenly mixed (a minute or so) you are ready to bake.
Cover baking sheet with parchment paper or a French Silpat sheet.
A tbs of dough, placed two inches apart, and baked 12 to 14 minutes should produce a thin, nicely baked cookie.
Allow to cool on cookie sheet 4 or 5 minutes. Use a thin spatula to place on cooling rack. Cookies will cool to be crisp and slightly chewy in the middle.
