Chocolate Chili Filet
- 2-4 beef tenderloin filets
- 1 tbs oil
- salt and pepper
- 4 C. beef broth
- 4 oz. dark unsweetened chocolate, broken or cut into small pieces
- 1/2 C. port
- 2 inch sprig of fresh rosemary
- 1 tsp ancho powder
- 1 tsp chili flakes
- 1 ½ tsp sugar
Bring beef broth, port and rosemary to a boil.
Add ancho powder and chili flakes.
Reduce heat to low boil and stir in broken chocolate pieces.
Increase heat to slow boil and reduce volume by half (uncovered).
While sauce is reducing, salt and pepper the steaks.
Heat pan or grill to medium high and sear steaks about 6-7 minutes per six for medium rare to medium or sear two minutes each side and place in 450 degree oven for 6 minutes.
Top with sauce.
Serve with favorite sides (vegetable and potato).
