Ingredients:
- 1 ¼ lb ground turkey
- 1 tbs olive oil
- 1 standard pkg taco meat seasoning
- 1 – 10 oz. Can diced tomatoes and green chiles
- 1 head iceberg lettuce chopped
- 1 ½ c. Shredded cheese (mexican or cheddar)
- 1 cup crumbled tortilla chips
- 8 oz. Salsa of choice
- 2 avocados diced
- 8 oz chopped tomatoes
- 6 oz. Black olives slivered
- 1/3 c. Sour cream
Dressing for salad:
- ½ c. Cilantro chopped
- 1 tbs chili powder
- 1 tsp sugar
- ½ tsp salt
- 1/4 tsp cumin
- ¼ tsp black pepper
- ¼ c. Lime juice
- ½ c. Olive oil
Tortilla or Frito chips to dip
Directions:
To make dressing, whisk together the first seven ingredients. Continue whisking while slowly adding the olive oil. Dressing should just start to thicken. Set aside.
Add the olive oil to a large saute pan over medium high heat, brown turkey meat according to same directions on pkg for ground beef or chicken. Add can of tomatoes and green chiles and bring to simmer. Continue simmering for 5 minutes. Set aside and allow to cool about 15 minutes.
Place lettuce on a platter. Top with meat mixture. Follow with a layer of cheese. Sprinkle broken tortilla chips over cheese. Next, cover the chips with salsa. Spread diced avocado over salsa, followed by chopped tomatoes. Sprinkle with olives and top with dressing. Garnish the salad with sour cream topping and a few cilantro leaves.
Dip with chips of choice.
