Beer Marinated Baby Back Ribs w/Peach Mandarin BBQ Sauce

  • 2 slabs baby back ribs
  • 2 bottles of beer
  • 1 sliced Spanish onion, sliced
  • 3 tbsp crushed garlic
  • 1 can peaches in heavy syrup
  • 1 can mandarin oranges
  • 2 cups ketchup
  • 2 tbsp black pepper
  • 1 tbsp salt
  • 2 tbsp chili powder
  • 2 tbsp onion powder
  • ½ cup brown sugar
  • ½ cup apple cider vinegar
  • 1/3 cup worcestershire sauce
  • 1 tbsp cayenne pepper
  • Olive oil


Combine brown sugar, cayenne pepper, chili powder, salt, pepper, onion powder and crushed garlic in a small bowl. Rinse ribs and rub with dry ingredients on both sides.

Place slabs in a deep container and cover with two bottles of beer. Place onions on top of rib slabs and drizzle with olive oil.  Marinate for at least 24 hours and for as long as 2 days.

Preheat oven to 350 degrees and bake ribs in a covered dish until completely tender (approximately 2.5 hours).


Combine peaches, mandarin oranges, ketchup, worcestershire sauce and apple cider vinegar and puree in a food processor or blend in a blender. This sauce can be poured over ribs during the last half hour of baking or basted on when ribs are done.
