Dick Goddard’s Pasta Primavera
1 package whole wheat pasta
1 broccoli/cauliflower fresh mix
1 package grated carrots
1 cup chopped onion
1 cup chopped spinach
½ cup diced water chestnuts
1 cup vegetable broth
1 can cream of celery soup
Prepare pasta per package directions and set aside.
Heat olive oil in a skillet. Add onions and carrots. Cook until tender. Add broccoli/cauliflower mix, yellow squash and spinach and cook until tender.
In a separate bowl, whisk broth and cream of celery soup together and pour into skillet with vegetables. Add water chestnuts and pasta. Simmer on low for about 15 minutes.
Season to taste with salt and pepper. Garnish with parsley flakes (if desired).
