Super Bowl Starters: Stuffed Couch Potatoes

One of the best parts of Super Bowl Sunday … the food! We checked in with some of the area’s top chefs for their favorite game day goodies. Chef Dante Bocuzzi shares his recipe for stuffed couch potatoes:

-- 2 large potatoes
-- Vegetable oil to fry
-- 6 shrimp
-- 1/2 cup diced chorizo sausage
-- 1 cup arugula leaves
-- grated cheddar cheese
-- 2 tablespoons whole butter


-- Preheat an oven to 375°
-- Cover the potatoes with foil and bake the potatoes until fork tender for about 20 minutes.
-- Cool the potatoes and cut them in half lengthwise. Scoop out the center potato making a boat.
-- In a small pot of oil at 350°, fry the potatoes golden brown.
-- In a large sauté pan brown the sausage and shrimp with the whole butter.
-- Add the remaining innards of the potato and season with salt and pepper.
-- Fold in the arugula and wilt.
-- Spoon the shrimp potato mixture into the fried potato halves.
-- Grate cheddar cheese over the top.
-- Place the overstuffed potatoes into the oven to melt the cheese.
-- Spoon some sour cream on top and serve immediately.
