CLEVELAND, Ohio -- Gamblers will soon be laying down bets at the Horseshoe Casino in Downtown Cleveland, and odds are folks will be checking out the new casino buffet, too.
Created by a team of chefs from Northeast Ohio, the Spread Buffet features local favorites to specialty dishes with a global flair. Executive Chef Steven Varga said there are six different food stations, including Italian, American and Asian.
"It's essentially six restaurants kind of all grouped together," he said.
Chef Varga added that this is not your typical casino buffet. Instead of one, hot holding table, a number of team members prepare and serve the food right up front at each food station.
"Everything goes into our specialty designed cook tech infrared warmers. They are very small dishes so we are always, constantly refreshing them," Chef Varga said.
The Spread Buffet will rely heavily on locally grown produce, getting perch from Lake Erie and other area food.
"For example, our beet salad -- we have our red and rainbow beets and the goat cheese that we have on top of there is a goat cheese that is produced right down the street here from Lake Erie Creamery," Chef Varga said.
No buffet is complete without a dessert. Pastry Sous Chef Faye Foote said with such a variety of cake pops, pies, cookies and gelato, some will find it difficult to choose just one.
"My specialty is making food that you love to eat and love to see. When you see it, you want to eat it," Chef Foote said.
The 400-seat Spread Buffet is in the lower level of the new Horseshoe Casino, inside the former Higbee Building.
They expect to serve upwards of 5,000 people daily for breakfast, lunch and dinner.
