Recipe: Hash with Mushrooms and Herbs

Recipe by Chef Steve Schimoler, owner of Crop Bistro

Ingredients:

  • 2 large sweet potatoes, diced
  • 1 pint shitake and portabello mushrooms, diced
  • 1 red pepper, diced
  • 4 slices bacon, cooked & diced
  • rosemary
  • thyme
  • salt & pepper
  • 1 egg
  • butter

 
Instructions:

  1. Dice and simmer potatoes until soft.
  2. Melt butter is pan.
  3. Add potatoes, peppers and mushrooms. Toss well.
  4. Add cooked bacon.
  5. Season with rosemary, thyme, salt & pepper.
  6. Cook on medium without stirring 3-4 minutes until brown.
  7. Stir, continue to cook until mixture is caramelized.
  8. Serve with fried egg on top.
