SHAKER HEIGHTS, Ohio – Brandon Chrostowski is the chef and owner of Edwin’s Restaurant on Shaker Square and he also runs the EDWINS Leadership & Restaurant Institute.
Chef Chrostowski shared a recipe with Fox 8’s Wayne Dawson that was a favorite of civil rights leader Martin Luther King Jr. and he also explained what ‘See the Good Tuesday’ is all about.

Pinto Bean Soup
1 Pound dried pinto beans
3 32oz cartons low sodium chicken stock
1/4 cup butter
3ea smoked ham hocks
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1 bunch collard greens –
1 tablespoon salt
1 teaspoon pepper
1 tablespoon minced garlic
1 tablespoon thyme
1# bag of dried beans = 4 -15oz cans of beans
Soak bean overnight in cold water, twice as much water as beans.
Sweat diced vegetables in butter until tender, add garlic
Add ham hocks, cut collards and stock and simmer for 1 1/2 hours
Remove ham hocks and reserve
Add thyme and allow to simmer for 15 minutes more while picking meat off bones
Add meat back to soup and adjust seasoning
