Living in Ohio’s Amish Country and owning The Miller Haus Bed and Breakfast, I come face to face with plenty of butter, bread, cakes, cookies, mashed potatoes and fried chicken.

We can all agree that Holmes County, Ohio is popular for the food it creates in kitchens across this popular farmland region. And quite frankly, the sweets and desserts are my all time favorite!

This Soft & Chewy Granola Bar recipe is one of our most treasured snacks.

Heads up- these are kinda like candy bars so don’t let the word “granola” fool y’all!

Soft and Chewy Granola Bars

  • ¾ cup butter
  •  2 (10oz.) bags mini marshmallows
  • 1 cup creamy peanut butter
  •  ¼ cup honey
  •  ¼ cup vegetable oil
  •  5 cups quick oats
  •  4-1/2 cups Rice Krispies
  •  1 cup Angel Flake coconut
  •  1-1/4 cup graham cracker crumbs  or crush 1 package, 9 whole graham crackers
  • 1 cup semi-sweet mini chocolate chips
  • 1 cup salted & roasted almonds, coarsely chopped
  • 1 cup mini M&M candies

In a large stainless steel bowl combine oatmeal, Rice Krispies, coconut, graham cracker crumbs, chocolate chips, almonds and mini M&M’s.

After mixing dry ingredients together thoroughly, make a well in the center of the mixture. Set aside.

Spray large stainless mixing spoon with cooking spray. Set spoon alongside bowl, ready to use the spoon for stirring together the whole recipe.

In a medium saucepan, melt together butter, marshmallows, peanut butter, honey and vegetable oil, stirring constantly.

Pour marshmallow mixture into the well and stir quickly until everything is coated well.

Immediately press mixture into a large cookie sheet.

I love to use the Nordic Ware Baker’s Half Sheet (13 x 18) with Storage Lid. Cut into granola bar size pieces. And get ready for the neighbors to visit!
