CLEVELAND, Ohio -- Grilled avocado loaded with fresh herbs is a perfect recipe for this time of year. The dish is not only super healthy, but bursting with fresh flavors.

Lemon Herb Avocado Cups
4 avocados cut in half, seed removed
¾ cup Extra Virgin Olive Oil
2 Meyer lemons, cut in half
1/2 cup of each: fresh Italian parsley, basil, thyme, oregano, chives -finely chopped
2 tbsp pine nuts, toasted
1 cup cherry tomatoes, cut in half
¼ cup peppadew peppers, sliced into thin strips
Coarse salt and pepper
Feta cheese, crumbled (optional)
Lightly brush open-faced avocado and lemon with olive oil.
Place the cut side of avocados and lemon down on grill and cook until avocados have grill marks and lemon is slightly charred and caramelized, about 5 minutes.
In a separate bowl, combine freshly chopped herbs with olive oil. Add pine nuts, cherry tomatoes and peppadew peppers, toss to coat.
Generously spoon herb mixture onto warm avocado halves. Squeeze juice from grilled lemons over covered avocados. Season with salt and pepper, to taste.
Top herbed avocados with crumbled feta cheese.
Serve warm, right off the grill!
