MILLERSBURG, Ohio — Lee Ann Miller, country chef and friend of Walnut Creek Cheese, stopped by Fox 8 News in the Morning to share her recipe for Strawberry Shortcake.
The colors make it the perfect dessert for your July 4th celebration.
And when peaches are in season later this summer, you can substitute those in place of the strawberries.
Red, White & Blue Strawberry Shortcake
- 1/2 cup butter (1 stick)
- 1-1/2 cups granulated sugar
- 1/2 teaspoon salt
- 2 eggs
- 2-1/2 cups all-purpose flour
- 2-1/2 teaspoons baking powder
- 1 cup water
- 1 teaspoon pure vanilla extract
- 6 Tablespoons cold butter
- 1 cup butter
- 1 cup all-purpose flour
Cream together softened butter, sugar and salt. Add eggs and beat well. Add dry ingredients, water and vanilla. Grease 13×9 inch baking dish and spread batter evenly in pan. Cut in 6 Tablespoons butter into sugar and flour until crumbly and put evenly on top of batter. Be aware there are a lot of crumbs. Side note: I have made a half batch crumbs before and sprinkled them on the cake after 20 minutes of baking). Both techniques are wonderful. Bake cake at 350 degrees for 40-45 minutes. Cool slightly then spoon over any fresh fruit. We love strawberries, blueberries or peaches. Top with whipped cream and mint garnish!
