It’s fish fry season and the Ridge Manor Banquet Center on Ridge Road in Brooklyn has some very special events planned. Joe Gallo shared the Ridge Manor’s fish fry recipe and explained to Fox 8’s Todd Meany how the banquet center will be rockin’ while the chefs are fryin’.

Rockin’ Fish Fry Recipe
1 ½ -2pounds (4-6 oz. pieces of COD)
Fresh Eggs (2 eggs per pound)
Bleached Flour (1 cup flour per pound)
Plain Bread Crumbs (2 cups per pound)
Old Bay Seasoning
Lawry’s Salt Seasoning
Cannola Blend (Olive Oil & Vegetable Oil)
Mix together Plain Bread Crumbs with Garlic Powder, Onion Powder, Old Bay Seasoning,
Parsley Flakes, Lawry’s Salt Seasoning and White Pepper.
In rectangular pan add Flour
In a separate mixing bowl add Eggs and whisk
Take fish pieces and pat each side in flour, then dip into egg mixture coating both sides, and then into bread crumbs patting down to coat both sides.
Pre-heat oil in sauté pan –about 1/4inch deep in pan
Place fillets in oil – about 4 fillets should fit comfortably
Fillets should sizzle as soon as they touch the pan
Brown each side approximately 3 minutes each side.
Remove fillets from sauté pan and place on paper towel to drain.
