When there is breaking news in the morning, you can be sure Fox 8’s Stacey Frey will be there. But did you know she’s just as comfortable in the kitchen as she is with a microphone in her hand?
Her husband loves her Greek stuffing, and we’re pretty sure you’re going to like it, too.
1/2 lbs. fresh chopped spinach
1/4 lbs. feta cheese
1/8 of an onion
1/8 tsp white pepper
1/4 cup grated Swiss cheese
1/4 cup grated cheddar cheese
2 whole lemons
Parsley, oregano & garlic to taste
Options: Can be stuffed inside filet mignon, chicken, fish or Athens mini fillo shells
Cook spinach & onion together
Mix in other ingredients
Spoon into fillo shells
Or stuff into meat, chicken or fish
For meat, chicken and fish squeeze lemon on top and sprinkle with parsley, oregano & garlic
Back at 350 degrees for 45 minutes
If your filet is 1 inch thick: Broil 10-12 minutes to medium rare.
