Carmello Fragassi is the chef and owner of La Campagna in Westlake and she frequently buys the produce she uses in recipes at the Indoor Farmers Market at Crocker Park. Carmello explained to Fox 8's Wayne Dawson what items are 'in-season' during the winter months and she also shared a recipe that uses items from the market.
PAVESE (Onion & Egg Soup)
3 to 4 Tablespoons of extra virgin olive oil
6 cups of a clear broth such as Chicken or vegetable
2 large onion peeled and cut
2 cloves of garlic chopped
6 eggs freshly ground pepper
Salt to taste
A large bunch of parsley
6 tablespoons of freshly grated cheese.
1 cup of Pasta
In a large stock pot pour in olive oil and sauté onions and garlic until softened, add salt and pepper to taste add the broth and parsley and let simmer for about 20 minutes.
Meanwhile put a pot of water on to boil for your pasta.
Once the water comes to a boil add a teaspoon of salt then add pasta and cook al dente. When finished drain and add to the broth.
Now put the broth on simmer and add your eggs slowly. Once all the eggs are in the soup put the lid on the pan and let them get to the semi soft stage.
Optional Can toast bread in a fry pan with some butter and place a piece of bread on top of the broth and place you egg on top of the bread and sprinkle with cheese and parsley.
Carmella says, "This soup is one of my favorites we used to always have it during lent and mom would always take spaghetti and break it into little piece, but I don’t do that at the restaurant, it can get a little messy, I use shorter cuts of pasta or a variety of pastas. Hope this becomes a favorite of yours."
