Southern shrimp and grits
Zach from Sublime Smoke shares an easy recipe and shows off their popular brisket.

Sublime Smoke Shrimp and Grits

1.5 TBL Unsalted Butter
1 TBL Flour
1 tsp Dried Italian Seasoning
5-6 oz. shrimp stock or other seafood bases
3 TBL Diced Green Pepper
3 TBL Diced Yellow Onion
1 clove Garlic
2 TBL Diced Tomato

Cheese Grits (use an instant hominy grit from store and follow direction, adding cheese as desired)

1) on medium high, sauté onions, green peppers, and garlic in butter for 1-2 minutes until they begin to soften

2) turn heat down to medium and add flour

3) whisk occasionally, allowing mixture to slightly stick to skillet and turn light brown 3-4 minutes

4) add tomatoes and shrimp stock and increase heat to medium high

5) whisking more often, allow mixture to thicken to a gravy consistency

6) serve over top of cheese grits
