Chef Rocco’s Whalen’s Tomato Bisque recipe

1/2 cup olive oil
2 large onions
2 tbsp salt
1 tsp Black pepper
8 garlic cloves
1 tbsp Fresh Thyme
2 tbsp fresh basil
54 oz of fresh or crushed canned tomatoes

– Heat olive oil in a medium saucepan over medium heat
– Cook onion and garlic for ten minutes till translucent
– Add spices and tomatoes
– Bring to boil
– Shut down to a simmer
– 1 hour later / purée and adjust seasonings
