Fox Recipe Box: Lee Ann Miller’s Hearty Breakfast Casserole & quick holiday party apps

MILLERSBURG, Ohio -- Lee Ann Miller loves entertaining and when she has overnight guests she treats them to this Hearty Breakfast Casserole. Lee Ann showed Fox 8's Kristi Capel how to put together this delicious dish.

Hearty Breakfast Casserole

1 lb. pound bacon, cut up & fried
1 medium onion (approximately 1 cup), chopped
½ jalapeño pepper (approximately 1 Tablespoon), minced
2 cloves garlic, minced
8 large eggs, beaten
¼ cup half & half
1/3 cup fresh parsley, minced (additional 1 Tablespoon for garnish)
½ teaspoon kosher salt
¼ teaspoon pepper
8 cups frozen, shredded hash brown potatoes, slightly thawed
24 ounce 4% small curd cottage cheese
1 cup sharp cheddar cheese, shredded
1 cup Gruyere cheese, shredded
1-1/4 cup mild swiss cheese, shredded

In a medium skillet, fry cut up bacon. When bacon is almost done, add onion, jalapeño and garlic. Sautee until veggies are soft & bacon is done. Drain. In a separate mixing bowl, beat eggs, half & half, salt and pepper. Stir in minced fresh parsley, cottage cheese and hash browns. Gently fold in sharp cheddar, Gruyere cheese and Swiss cheese. Pour into 13x9 inch, greased baking dish. Garnish top of casserole with additional 1 Tablespoon minced fresh parsley. Bake at 350 degrees for an hour to an hour and fifteen minutes, until set and slightly golden.

Sherbet Punch
Ingredients:
One quart of sherbet (She used raspberry flavored, but you can choose your favorite)
Fresh fruit (Again, she used raspberries)
Two-liter of 7-Up

Instructions:
Scoop the sherbet into your punch bowl, breaking it into pieces. Take your fruit and place a piece or two at the bottom of each cup you'll be using to serve your guests. Sprinkle the rest into the punch bowl. Top with the 7-Up. Ready to serve!

Cream Cheese and Jelly Dip
Ingredients:
8-ounce block of cream cheese
Jar of your favorite jelly (Lee Ann used Walnut Creek Raspberry Jalapeno Jelly)
Crackers or your favorite dipping treat

Instructions:
Whip your cream cheese until it's super smooth. Smooth the cream cheese into your serving tray or dish. Top with your jelly. Ready to dip!
