Fox 8 Recipe Box: Grilled Flank Steak with Corn Custard & Scallion Relish

CLEVELAND, Ohio -- Chef John Selick is the Executive Chef at University Hospital's Ahuja Medical Center and he is one of nearly two dozen chefs participating in a huge star-studded culinary event to benefit autism research.

Cleveland's own Michael Symon and special guest Bobby Flay are headlining this special event. Fox 8's Todd Meany learned more about Autism Speaks Chef Gala as Chef Selick shared the tasty recipe he is making for the event.

Grilled Flank Steak with Scallion Relish           Serves 4

 Ingredients                                                      Amounts

Flank Steak                                                     2 lbs
Coriander Seeds                                          1 Tablespoon
Whole Black Pepper                                  1 Tablespoon
Salt   to taste

Green Onion (Scallion)                                   8 each
Garlic Clove, chopped                                    1 each
Lime                                                                          1 each
Cilantro, chopped                                            1 Tablespoon
Olive Oil                                                                2 tablespoons
Salt and Pepper                                                to taste


Preheat a grill or grill pan to medium high heat.
Toast the coriander and peppercorns in a skillet or oven until fragrant, and then grind in a
spice grinder. Season the flank steak with salt and generously rub with coriander-
peppercorn spice mix. Cook the flank steak on the grill, about 6 minutes per side for
medium rare. Let steak rest for 5 minutes before slicing.
While the steak is resting, coat the scallions with 2 teaspoons of the olive oil and season
with salt and pepper. Cook the scallions on the grill slightly charred, about 4 minutes.
Chop the scallions and mix with the chopped garlic, cilantro, olive oil, and lime juice.

Adjust the seasoning with salt and pepper.
