- 1 cup quinoa
- 1 cup chicken bone broth
- 1 cup water
- A pinch Minced garlic
- 1 cup chopped mushrooms
- 1 cup spinach
- ½ cup goat cheese
- 1cup chopped chicken
Put 1 cup quinoa in pot with 1 cup chicken bone broth and 1 cup of water.
Add minced garlic and chopped mushrooms to the pot.
Simmer for 20 minutes until the quinoa is cooked.
After quinoa is cooked and the burner is turned off, put 1 cup of spinach on top of cooked quinoa let sit for 5 minutes with the lid on.
Add 1/2 cup of goat cheese & 1 cup of chopped chicken. Stir mixture together
This can be eaten as is OR added to a wrap for a heartier meal.
