Strawberry Nutella French Toast

This recipe for french toast offer a different spin on this traditional breakfast item. In this version the french toast is accented with a hint of orange and is a complemented with a pairing of warm strawberries and chocolate for a romantic Valentines Day breakfast.

 

Ingredients

  • 1/3 cup Crushed toasted hazelnuts for garnish
  • 1 Loaf of day old challah or egg bread; 6 slices each 3/4 inch to 1inch
  • Unsalted butter
  • Nutella
  • Whipped Cream
  • 2 cups Strawberries de-stemmed and quartered
  • 3 TB Grand Marnier
  • 3 TB Honey
  • 3 Eggs
  • 1 cup Half and half
  • 1/4 tsp Cinnamon
  • 1/4 tsp Fresh grated nutmeg
  • 1 tsp Orange zest ( a microplane works best for this, try to avoid the white pith)
  • 1 1/2 TB Granulated sugar
  • 1/4 tsp Pure vanilla extract
  • 1/4 tsp Kosher salt

First combine strawberries, honey, and Grand Marnier in a small bowl and toss together. Set aside and allow to macerate for 45minutes to an hour. This part can be done the night before and stored in an air tight container in the refrigerator.

Next, in a medium bowl, whisk together eggs, half and half, cinnamon, nutmeg, orange zest, sugar, pure vanilla extract, kosher salt. Use immediately or if making ahead of time store the mixture in an air tight container in the refrigerator. Whisk the batter again before using.

To Assemble:

Place strawberry mixture in a medium sauté pan over medium high heat. Let the liquid come to a simmer for about 3 to 5 minutes. Allowing the strawberries to warm through and letting the liquid reduce. Reduce the heat to low and swirl in 2 teaspoons of butter to finish and thicken and set aside.

Use a shallow pan or a pie tin to hold the batter for the french toast. Dunk each slice of bread two at a time in egg mixture, coating both sides. Heat 1 tablespoon butter in a very large sauté pan over medium heat. Place in pan, and cook for 2 to 3 minutes on each side, until nicely browned.

Smear a tablespoon of Nutella in a line on your plate on your plate. Shingle your french toastand top with warm strawberry sauce, hazelnuts, and whipped cream.
