Chocolate Banana Nut Muffins

Ingredients:

  • 1 ½ C. all-purpose flour
  • ½ C. whole wheat flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1/8 tsp nutmeg
  • 1 C. chocolate chips
  • ½ C. pecans or walnuts coarsely chopped
  • 1 large egg
  • ¾ C. packed light brown sugar
  • 1 1/3 C. ripe bananas mashed
  • 1/3 C. apple sauce
  • 6 tbs vegetable oil
  • 1 tsp vanilla

 

Directions:

Preheat oven 375F

Butter muffin tin or spray with bakers choice spray.

Whisk together first seven ingredients in medium bowl.

In a separate medium bowl, mix remaining ingredients.

Gently fold dry ingredients into wet ingredients. Do not over mix. There should even appear to be a couple of dry spots in batter.

Fill muffin tins 2/3s full.

Bake 18-20 minutes.

They are done when a toothpick inserted in middle of muffin comes out dry. If the toothpick passes through a chocolate chip, it will appear wet, but that’s fine.

Cool a couple minutes in pan before removing to cooling rack.
