Yummy Veggie Breakfast Casserole

  • 1 Loaf of day old Bread, cubed
  • 8 Eggs
  • 3 C. of Milk
  • 1 tsp. Ground Mustard (more or less)
  • 2 C. Cheddar Cheese
  • 1 C. Broccoli Florets
  • ½ C. Cherry Tomatoes, halved
  • ½ C. Sweet Peppers, diced
  • 3 Green Onions, chopped
  • ½ Red Onion, chopped
  • 1 Stick of Margarine or Butter, melted

Beat together eggs and milk.

Add 1 C. of Cheese, veggies, and ground mustard.

Fold in Bread. This should be a little “soupy”. If not, add an egg or two mixed with milk.

Pour into a greased casserole dish.

Top with remaining cheese.

Drizzle margarine or butter over top.

Cover with foil and bake at 350 degrees for 1 hour. Uncover and bake until cheese is melted and lightly brown.

Please note, the basic recipe can be changed and substitute veggies for meats such as ham, bacon or sausage. This can be made ahead and baked the morning of the event.
