Fox 8 Recipe Box: How to create a Bruschetta Bar for your next party

CLEVELAND, Ohio -- Chef Eric Wells is owner of Skye LaRaes Culinary Services and he is an expert at creating wonderful dining experiences in his client's homes.   Chef Wells often uses a Bruschetta Bar for parties and he shared his concept along with some recipes with Fox 8's Stefani Schaefer.

Tuscan Bruschetta
1 French baguette, sliced into ½ inch slices
½ cup + ½ cup extra virgin olive oil, divided
2 large tomatoes, diced
1 cucumber, diced
1 cup pitted Kalamata olives, quartered
4 ounces fresh basil, torn
½ cup red onions, sliced thin
6 ounces goat cheese, crumbled
½ cup balsamic vinegar
Salt
Pepper

Lay baguette slices on a large cutting board and drizzle 1/2 cup of oil on the baguette slices.

Meanwhile, place tomatoes, cucumbers, olives, basil, red onions and cheese in a large bowl. Toss lightly. Add the balsamic vinegar and stir in 1/2 cup of extra virgin olive oil. Season with salt and pepper to taste.

Heat grill pan on medium high. Place baguette slices on the grill pan and grill for about 1-2 minutes on each side. If you do not have a grill pan, preheat oven to 400 degrees, place the baguette slices on a sheet pan and bake for about 5-7 minutes. Remove and set aside.

Serve by placing a spoonful of tomato mixture on a baguette slice.
Yield 6 servings.

Grilled Peppers Bruschetta
1 French baguette, sliced into ½ inch slices
½ cup + ½ cup extra virgin olive oil, divided
3 assorted peppers, deseeded and halved
½ cup red onions, sliced thin
6 ounces gorgonzola, crumbled
4 ounces fresh basil, torn
Salt
Pepper
Lay baguette slices on a large cutting board and drizzle ½ cup of oil on the baguette slices.

Meanwhile, drizzle the peppers with the remaining olive oil. Place the peppers on a preheated grill until charred. Remove and place in a paper bag for about 5 minutes. After cooled, peel the char from the peppers and discard the char. Slice the peppers thin.

Heat grill pan on medium high. Place baguette slices on the grill pan and grill for about 1-2 minutes on each side. If you do not have a grill pan, preheat oven to 400 degrees, place the baguette slices on a sheet pan and bake for about 5-7 minutes. Remove and set aside.

Top the Bruschetta with the peppers, red onions gorgonzola and basil.
Yield 6 servings

Strawberry Bruschetta
1 French baguette, sliced into ½ inch slices
½ cup + ½ cup extra virgin olive oil, divided
1 cup clover honey
1 pint strawberries, halved and hulled
1 cup whipped cram
½ cup balsamic glaze

Lay baguette slices on a large cutting board and drizzle ½ cup of oil on the baguette slices.
Heat grill pan on medium high. Place baguette slices on the grill pan and grill for about 1-2 minutes on each side. If you do not have a grill pan, preheat oven to 400 degrees, place the baguette slices on a sheet pan and bake for about 5-7 minutes. Remove and set aside.

Assemble Bruschetta by drizzling bread with honey. Then, place two or three slices of strawberries on each toast. Top each toast with whipped cream and drizzle with balsamic glaze.

Yield 6 servings
