FOX 8 Recipe Box: Marinated chicken kabobs with cucumber salsa

CLEVELAND, Ohio -- A chef from the Giant Eagle Market District in Uniontown stopped by Fox 8 News in the Morning on Friday to share a recipe for marinated chicken kabobs.

Chef John Belt is the executive chef.

Yogurt Marinated Grilled Chicken Kabobs with Cucumber Salsa


  • 2 lbs chicken thighs, cut into 4/6 pcs per thigh
  • 1 c plain yogurt
  • ¼ c olive oil
  • ½ lime, juiced
  • 3 cloves garlic
  • 3 green onions
  • ¼ cup fresh ginger
  • 1 fresh Serrano chili
  • ½ bunch cilantro
  • ¼ t cumin
  • ¼ t coriander
  • ¼ t cardamom
  • ¼ t cinnamon
  • ¼ t clove
  • 2 T kosher salt
  • 1 t black pepper


Puree all ingredients in food processor or blender. Pour over chicken to coat. Marinate at least 4 hours. Place chicken on skewers. Grill over hot coals until done. Serve with Cucumber Melon Salsa.

Cucumber Melon Salsa


  • 1 c diced cucumber (seedless variety/unpeeled)
  • 1 c diced honeydew
  • ½ lime zested and juiced
  • ½ bunch cilantro, chopped
  • ½ c green bell pepper diced
  • 1 t salt
