The day after Thanksgiving is typically filled with plates of leftover mashed potatoes and cold turkey. A local chef says it doesn't have to be so bland. Chef Jeff Jarrett showed FOX 8's Todd Meany how to whip up a hearty meal with Thanksgiving leftovers.
Thanksgiving Leftover Casserole
Recipe by Chef Jeff Jarrett
Preheat oven to 350
All ingredients are approximates, depending on how much you eat on turkey day
3 cups diced or shredded cooked turkey
2 cups dressing/stuffing
1 cup corn (or green beans)
2 cups mashed potatoes
1 cup cooked sweet potatoes
1 cup turkey gravy
1/2 cup cranberry sauce
Salt and pepper
In a 9x9 pan, spray the bottom with vegetable spray or smear with some butter.
In the bottom of the pan, spread the mashed potatoes in an even layer.
On top of the mashed potatoes, place your leftover sweet potatoes.
Season with salt and pepper.
With your fingers, break off some pieces of butter and scatter around.
Next, layer your corn.
Sprinkle your turkey all around, and then pour your gravy over all.
Spoon your cranberry sauce on top.
Lastly, spread your dressing across the whole top and dot with butter.
Cover with foil and bake for 30-40 minutes, until hot.
Remove foil and bake another 10 minutes, until dressing is golden and crispy.
