Jambalaya Sauce

  • .5 oz. Oil
  • 1 lb. Chicken Thighs
  • 1 lb. Sausage
  • 1 oz. Minced Garlic
  • 1 lb. Celery
  • 12 oz. Green Peppers
  • 12 oz.  Onions
  • 1 qt. Chicken Stock
  • 2 Bay Leaves
  • 2 TB Cajun Spice
  • 2  cups Tomato Sauce
  • ½ cup Diced Green Onions
  • 1 qt. Diced Tomatoes

 

Heat oil in pot until almost smoking and add sausage and chicken, stir constantly.

Add onions, celery, green peppers, and garlic and continue to stir (don’t brown vegetables)

Once onions become translucent add Cajun spice and continue to sauté for 2 minutes.

Add tomato sauce, diced tomatoes, and bay leaves.  Bring to a boil and simmer for 10 minutes.

Add chicken stock,  green onions, and rice.  Bring to a boil and simmer for 45 minutes.

Remove from heat and cool.

 

Heat and add cooked white rice and enjoy!
