Chimichurri Skirt Steak Sandwich with Tomato Jam, Arugula and Goat Cheese

Chimichurri Sauce:

1 Bunch Cilantro
1/2 Bunch Flat Leaf Parsley
2 Limes-Juice and Zest
1 tsp ground Cumin
1/2 cup Olive Oil
Salt and Pepper To Taste

Blend All Ingredients Together Until Smooth.
Add Half of The Marinade To Steak And Marinate For 6-12 Hours.

Reserve Half Of Sauce For Later.

Tomato Jam

1 tsp olive oil
2 Tomatoes-Small Diced
1/2 Red Onion-Diced
1Tbsp Minced Garlic
1 tsp Chopped Rosemary
1 Tbsp Brown Sugar
1 Splash Balsamic Vinegar
Salt and Pepper To Taste

Heat Olive Oil Over A Medium Low Heat. Add All Ingredients And Cook For 45-60 Minutes Until Thick. Let Cool

For Sandwich Construction:

Cook Steak On Grill Or In Saute Pan For 2 Minutes Per Side. Once Cooked, Set On Cutting Board And Let Rest For 2 Minutes. Slice Against The Grain.

Put Sliced Steak On Bottom Of Sandwich. Top With Tomato Jam And Then Arugula. Bake In 400 Degree Oven For 3 Minutes To Toast Bread And Warm Through. Sandwich Is Ready To Serve. Enjoy!
