1-package ramen noodles, crushed
1 cup roasted & salted pecan halves
3 Tablespoon butter
1 large head romaine lettuce, chopped (10-12 cups)
1 crown broccoli, chopped (approx. 3-4 cups)
4 green onions, chopped
1 cup strawberries, sliced thick
½ cup red wine vinegar
¾ cup sugar
½ cup vegetable oil
1 Tablespoon soy sauce
¾ teaspoon salt
¼ teaspoon pepper
In a medium saucepan, on medium heat combine crushed noodles (discard seasoning pack) and pecan halves. Sautee mixture until it starts to turn golden, be careful not to over-toast! Set aside to cool. Chop vegetables and strawberries and combine in large bowl.
Heat red wine vinegar and sugar together and stir until the sugar is dissolved. Allow dressing to completely cool, and then add remaining dressing ingredients.
To serve salad:
Toss together noodle and nut mixture with vegetables and strawberries. Pour dressing over salad mixture and coat thoroughly. Serve immediately. Serves 8-10.
