Hudson's Restaurant is cooking up a variety of seafood specials during the Lenten season and they will be offering these dishes on Fridays at both of their restaurants.
JJ and Kevin Altomare shared the recipe for their mini lobster rolls with Fox 8's Kristi Capel.

Mini Lobster Rolls – Serves 6
12 ea Mini Rolls
¼ cup Butter
1.5 cups Lobster Salad
1 tbl Parsley
· Cut the mini roll from corner to corner
· Place butter on grill or in pan and grill inside of roll
· Place lobster salad on rolls
· Place on plate and garnish with fresh parsley
Lobster Salad –Yields 1.5 cups
¼ cup Mayonnaise
½ ea Celery (Rib)
¼ tsp Kosher Salt
¼ tsp Black Pepper
1 tsp Fresh Lemon Juice
1.5 tsp Fresh Tarragon
6 oz Lobster Meat (Claw, Knuckle & Leg)
· Dice Lobster Meat between ½” to ¾”
· Mince Celery
· Chop Tarragon
· Combine all ingredients together & Chill
