FOX 8 Recipe Box: Al ‘Bubba’ Baker’s Super Chili

Bubba's Q Super Chili

Recipe by Al "Bubba" Baker, owner of Bubba's Q World Famous Bar-B-Q & Catering


2 T olive oil
1 chopped onion
5 celery stalks, diced
1 large green pepper, chopped
1 pound ground beef, seasoned
1 14.5 oz can diced tomatoes
1 6 oz can tomato paste
1 large can tomato sauce
1 16 oz. bottle tomato juice
4 oz. red wine vinegar
2 cloves garlic, minced
4 oz. dark chili powder
2 t dried cilantro
1 T cumin
1 t cayanne pepper
1 pinch of white sugar
salt & pepper to taste
1 15 oz. red kidney beans (optional)

Bubba's Coaching Points:

  1. Cook ground beef and season with salt & pepper, drain in colander.
  2. Heat oil, then saute the chili powder very slowly until it smells up your kitchen (key to this chili) Do not burn.
  3. Add onions, celery, green peppers and garlic.
  4. Now add the remaining ingredients leaving the meat for last.
  5. Stir really good and reduce the heat and simmer for one hour, 30 minutes, uncovered.
  6. Optional: add beans (I don't use them)

*This is best made the day before, then warm up in the crock pot for the big game all day. Eat in the bowl with sour cream, green onions, nachos, chili dogs or over a baked potato!

    I’m sorry, I am trying desperately to find the Wizard of Oz Apple Crisp Recipe from earlier this year. Please, can anyone help? I watched it made on fox8 and I tried it. It was great, but I lost my copy. Can you please put it back on the website? Thanks!

    Do not make this recipe!!!! Its terrible. When making it, I thought 4 oz. of chili powder sound too much. Well believe it is. Way too over powering! Had to throw the whole batch out. What a waste of money and time. Find another recipe!
