Tiganetes are pancakes that were a popular breakfast dish over 2500 years ago. In ancient Greece they were garnished with honey and sesame seeds or honey, fruits and nuts. In his works, Athenaeus tells us of the Athenian comic poet who described in his writings the steam rising from tiganetes in the morning: ‘it will rain raisins and the dew will be warm pancakes.’ It is believed that tiganetes were the first documented pancake in the world.
(Makes 20 small pancakes)
- 1 cup plain (all-purpose) flour
- ½ cup currants
- ½ teaspoon sea salt
- 1–1¼ cups water
- 4 tablespoons extra virgin olive oil, for frying
- ¼ teaspoon ground cinnamon
- 1 tablespoon honey
- 50 grams (2 ounces) crushed walnuts or toasted sesame seeds
Place the flour, currants, salt and water into a bowl and mix until well combined. The batter should end up with a thin paste consistency.
Heat a non-stick frying pan with 1 tablespoon of the olive oil over a medium heat. Using a tablespoon, spoon the batter into the frying pan to form five pancakes and cook until they are golden brown on each side. This takes about 1 minute on each side. Repeat this process until the batter is finished.
Place all the pancakes on a serving platter and garnish with the cinnamon, honey and walnuts. Serve while still hot.
