No-Mess Casserole

Recipe courtesy of Chef Matt Anderson of UMAMI in Chagrin Falls using ingredients from Fresh Fork Market

Ingredients:

  • 1 onion, quartered and sliced
  • 6 eggs
  • 1/4 cup cream
  • 1/2 loaf whole wheat bread, cubed
  • 1 sweet potato, baked first
  • 2 cups frozen sweet corn
  • 2 cups shredded cheese
  • pinch of salt
  • pepper to taste

 

Instructions:

First, peel the onion and quarter.  Slice and saute the onion with butter until soft and browned.  Wrap the sweet potato in foil and bake until soft. Peel and cut into chunks.

In a bowl, soak the bread chunks in milk and egg batter.

Grease a casserole dish with butter or lard.  Arrange the bread, sweet potatoes, sauted onions, sweet corn, and part of the cheese.  Crack 6 eggs (or more depending on depth of pan) and whip in cream.  Pour scrambled egg mixture over other ingredients.  Bake until egg start to set. Top with additional cheese and bake until a toothpick inserted in middle comes out clean.
