Sweet potatoes are a popular dish any time of the year, but especially at Thanksgiving. Chef Eric Wells, owner of Skye LaRae's Culinary Services, shared his recipe for turning this tasty vegetable into an eye catching and mouth watering dessert.

Sweet Potato Pie Tarts

8 3-inch pastry tart shells

Filling:
2 large sweet potatoes
2 eggs
2 egg yolks
2/3 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 cup light cream or half-and-half

Preheat oven to 350 degrees. Bake sweet potatoes for 1 hour, or until soft. While potatoes are cooling, place tart shells on a sheet pan and bake for 8-10 minutes.

Cool, peel and puree sweet potatoes in the food processor. Place pureed sweet potatoes into a bowl and whisk in eggs and yolks. Whisk in the next 5 ingredients in order, whisking smooth between each addition. Pour the filling into the prepared tart shells..

Bake the tarts for about 15-20 minutes, or until the crust is baked through and the filling is set. Cool the tarts on a rack.

Yield 8 servings.
