Braised Beef Short Ribs

(Serves: 4)

Ingredients:

  • 2 Pounds Beef Short Ribs
  • Kosher Salt
  • Black Pepper
  • Flour
  • 2 Tbsp. Vegetable Oil
  • 4 Cloves Garlic
  • 2 Sprigs Thyme, fresh
  • 1 Sprig Rosemary, fresh
  • 1 Cup Red Wine
  • 2 Cups Beef Stock

 

Directions:

Season beef with salt and pepper and dredge in flour.  Heat oil over medium high heat, add beef and sear on all sides.  Add in the garlic, thyme and rosemary.  Pour in the wine and allow to reduce by half.  Add in the beef stock, cover and simmer until beef is tender about 2 hours.  Serve with roasted root vegetables and mashed potatoes.  Spoon some of the braising liquid over the top as a light sauce.

 

Roasted Root Vegetables

(Serves: 4)

Ingredients:

  • 1½ Pounds Assorted Root Vegetables, chopped
  • 2 Tbsp. Vegetable Oil
  • Salt and Pepper
  • 4 Sprigs Fresh Thyme

 

Directions:

Heat oven to 375 degrees.  In a bowl toss the vegetables, oil, salt, pepper and thyme.  Place onto a sheet tray and roast in the oven until vegetables are softened and lightly browned about 20 minutes.  Remove from oven and serve.
