Fox Recipe Box: Autumn Harvest Stew

Shana shares one of her favorite recipes for this time of year with Fox 8's Jennifer Jordan.

Autumn Harvest Stew

1 butternut squash,peeled and cubed
1 acorn squash peeled and cubed
1 yellow squash peeled and cubed
2 cloves garlic
1/2 spanish onion diced
1 small pumpkin

Take a large bowl and put all diced squash in together, finely dice your garlic and add your onion

Seasonings - In small bowl combine
1/2 tsp cumin
1/2 tsp curry
1/2 tsp cinnamon
1/2 tsp granulated garlic
salt and pepper to taste
Stir all spices together.
Massage spices into veggies so all veggies are dry rubbed and coated
Place veggies on cookie sheet with oil at 500-degrees for 45 minutes
Add to boiling water with your choice of veggie stock
Scoop flesh from roasted pumpkin out and add to pot
Garnish with the pumpkin seeds from your pumpkin and serve the stew using pumpkin shell as your bowl
For garnish we use either fresh cilantro or coconut milk whipped with grated fresh ginger and honey!
