Buffalo Chicken Meatballs

  • 2 TBLS. Vegetable Oil
  • 4 TBLS. (1/2 Stick) Unsalted Butter
  • 1/3 Cup Hot Sauce
  • 1 pound Ground Chicken
  • 1 Large Egg
  • ½ Celery Stalk, minced
  • ¾ Cup Bread Crumbs
  • 1 Tsp Salt
  • Blue Cheese Dressing for Dipping



Preheat oven to 450 Degrees

Drizzle oil into 9 x 13 baking dish,  set aside

Combine butter and hot sauce in a sauce pot over low heat, stirring til melted, then cool for 10 minutes

Combine that hot sauce mixture, chicken, egg, celery, bread crumbs and salt

Roll into small balls, put in pan and bake 15-20 minutes.  Serve with blue cheese dressing (drizzle over meatballs or use for dipping)
