Preheat oven 350


  • 1 lb sea bass


Wet sauce:

  • 3 tbs olive oil
  • 1 tbs soy sauce
  • 1 tsp honey
  • juice  ½  lemon



  • 1 cup panko bread crumbs
  • ¼ cup hazel nuts
  • ½ tsp cayenne pepper (This is spicy! Reduce to ¼ if you like.)
  • 1 tbs cilantro chopped



  • ¼ C. honey
  • 1 tsp  fresh chili sauce (sambal or  sauce of choice)



Combine wet ingredients and mix in shallow dish. Mix well.

Combine dry ingredients and mix in shallow dish.  Mix well.

Divide sea bass into 2 or 3 pieces. Dip into wet sauce and cover all sides.

Dredge wet sea bass thru dry ingredients. Cover completely. You can pat the dry ingredients on the fish lightly to make sure they stick.

Place on a greased baking sheet or parchment paper and roast in a 350 degree oven for 20 minutes.

While fish is cooking, heat honey over low heat. Add hot sauce a little at a time to desired heat. Taste test along the way.

Serve fish with a drizzle of the honey sauce and a light sprinkle of cilantro garnish.
