Ken’s Perch Dip

  • 1 cup steamed or boiled perch
  • ½ cup parmesan cheese
  • 1 cup mayo
  • 1 cup Vidalia onion
  • 4 ounces sour cream


Mix ingredients together, serve with crackers or thin toast


Tartar Sauce with a kick

  • 1 cup chipotle mayo
  • 1 tablespoon sweet relish
  • 1 tablespoon Vidalia onion
  • 1 tablespoon de-seeded and chopped jalapeno
  • 1 tablespoon cilantro
  • 1 teaspoon spicy mustard


Combine ingredients and chill


Mike’s Slaw

  • 1 tablespoon vinegar
  • 1 cup mayo
  • 2 tablespoons spicy mustard
  • 3 cups cabbage (shredded)
  • 3 cups red cabbage (shredded)
  • 1 cup grated carrot
  • ½ cup green pepper (chopped)
  • ½ cup red pepper (chopped)
  • ½ cup cilantro (chopped)
  • Pinch of cayenne pepper
  • Pinch of garlic powder
  • Pinch of onion powder
  • Pinch of pepper


Combine all ingredients – serve chilled
