Guacamole Deviled Eggs

Ingredients:

  • 6 hardboiled eggs peeled
  • 1 ripe avocado peeled, pitted and mashed
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup diced cherry tomatoes
  • 1 tablespoon chopped cilantro
  • 2 teaspoons fresh lime juice
  • 1 teaspoon tabasco
  • Pinch of salt
  • Dash of pepper
  • Paprika
  • 12 cilantro leaves for garnish

Instructions:
Cut eggs lengthwise, set white halves a side, place yolks in bowl with avocado, add remaining ingredients, except cilantro leaves, mix well and fill empty egg white halves, garnish with paprika and cilantro leave.  Chill until serving

Bacon and Cheddar Deviled Eggs

Ingredients:

  • 6 hardboiled eggs peeled
  • 4 slices apple-wood bacon diced
  • ½ small onion diced
  • 1 cup grated cheddar-jack cheese
  • ½ cup mayonnaise
  • 4 ounces softened cream cheese
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Dash of pepper
  • Paprika

Instructions:
Cook bacon until crisp, remove and place on paper towel to drain, cook onion in bacon drippings until softened, meanwhile cut eggs lengthwise, set white halves a side, place yolks in bowl with mayonnaise, cheddar-jack, cream cheese and mustard, salt and pepper mix well, drain onion on paper towel and add to bowl with bacon.  Fill empty egg white halves, garnish with paprika, chill until serving.

Crab Cake Deviled Eggs

Ingredients:

  • 6 hardboiled eggs peeled
    1-12 ounce can lump crab meat
    ½ cup mayonnaise
    1 tablespoon minced shallot
    2 teaspoons fresh lemon juice
    1 tablespoon Old Bay Seasoning
    1 tablespoon Worcestershire sauce
    1 tablespoon Dijon mustard
    1½ tablespoons chopped fresh tarragon
    Pinch of salt
    Dash of pepper
    Paprika
    Tarragon sprigs for garnish

Instructions:
Cut eggs lengthwise; set white halves a side, place yolks in bowl with all ingredients except paprika and tarragon sprigs.  Mix well and fill empty egg white halves, garnish with paprika, chill until serving.
