PASSOVER POTATO KUGEL
3# Yukon Potatoes
2T Chopped Chive
1C Matzo Meal
6 Eggs cracked & whipped
1T Potato starch or corn starch
2T Extra virgin olive oil
Kosher salt & fresh ground black pepper to taste
Grate the potatoes on a large holed grater
Toss with remaining ingredients
Spray 9x13 pan with cooking spray
Spread potatoes in an even layer
Bake at 325 degrees for approximately 25 minutes
Let sit for about an hour to set, then cut, reheat and serve.
