Fox 8 Recipe Box: Miller Haus Reuben Casserole

Just in time for St. Patrick's Day, a delicious recipe from LeeAnn Miller, owner of Miller Haus Bed & Breakfast, and friend of Walnut Creek Cheese.


  • 32 oz. jar sauerkraut, drained
  • 1 cup sour cream
  • 1 large onion, diced
  • 1-1/2 lb. corned beef, chipped & chopped
  • 3 cups Swiss cheese, shredded
  • 10 slices rye bread, made into crumbs
  • ½ cup butter, melted


In a 13x9-baking dish greased with butter, layer sauerkraut, sour cream & onion. Crumble corned beef over kraut mixture. Layer shredded Swiss cheese over corned beef. Combine melted butter with rye bread crumbs, top casserole with bread crumb mixture.  Bake at 350 for 45-60 minutes. Serves 6-8
