Fox 8 Recipe Box: Cheeseburger Soup

LeeAnn Miller, owner of Miller Haus Bed & Breakfast and friend of Walnut Creek Cheese, stopped by to share her family's favorite recipe -- cheeseburger soup.


2 lbs. hamburger

3/4 cup chopped onion

1/2 small jalapeno, minced fine

1 1/2 quart chicken broth

1 cup water

1/2 cup shredded carrots, chopped

1 1/2 cups diced celery

4 1/2 cups diced potatoes

1 1/2 t. salt

3/4 t. black pepper

pinch of cayenne


Soup base:

1 stick butter

3/4 cup flour

3 cups milk

3 cups Velveeta cheese


Brown hamburger, onions and jalapeno; drain. Put chicken broth, water, vegetables, salt, pepper, cayenne and parsley into a large soup pot and bring to a boil. Cook between 8-10 minutes, until potatoes are tender. For soup base, mix first three ingredients in a pan and stir until thick then cut in pieces of Velveeta cheese. Stir until cheese is melted, then add soup base to broth and vegetables. Add hamburger, onion and jalapeno. Do not boil after adding soup base to broth mixture.
