Champagne Shrimp with Angel Hair Pasta

  • 1 Pound Shrimp, raw, peeled and deveined
  • 8 Ounces Angel Hair Pasta
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Shallots, minced
  • ½ Tbsp.Garlic, minced
  • 2 Cups Champagne
  • ¼ Cup Tomatoes, diced
  • ½ Cup Asparagus, chopped
  • 2 Ounces Butter
  • Parsley
  • Salt and Pepper               



Cook pasta according to directions on the package.  Season shrimp with salt and pepper.  Heat oil in sauté pan over medium high heat.  Add in the shrimp and sauté briefly.  Add the garlic and shallots.  Next add in the champagne and allow to reduce slightly.  Finish with the tomatoes and asparagus.  Turn off the heat and allow butter to slowly melt.  Adjust seasoning as needed and garnish with fresh parsley.  Serve over angel hair pasta.
